Awesome marinade!
Combine 1tbsp honey, 3 tbsp soy sauce or tamari, 1 tbsp seasoned rice wine vinegar, 1 large minced garlic clove, 1 tsp red pepper flakes, and salt and pepper to taste. I used this to marinate some chicken I put in a stir fry with brown rice, onions, carrots and mushrooms. I think it would be a good marinade for some cubed tofu too!

Fast easy healthy and delicious lunch

I am an Edgy Veg: Raw Thai Salad →

This salad was inspired by my love for pad thai. Fun salads are key to keeping up an exciting raw diet. No one wants to eat plain lettuce three meals a day… common now.
2 zucchinis, sliced into strips (I use a vegetable peeler)

Don’t be fooled by their resemblance to pork rinds! These delicious lil nuggets are vegan and have the most meaty texture I’ve ever tasted in a soy product fo sho. Mediterranean Pita Pockets!
This recipe serves three people and is a lovely lunch!

3 mini pita pockets, sliced in half

Stuffed Peppers
Me and Kevin made these tonight for dinner. They’re REALLY tasty…we used quinoa for the filling of ours, but you could use brown rice, cous cous, or really any grain you want! Also feel free to mix it up with the vegetables and just use whatever you have on hand!

Sesame Noodles
These noodles were pretty easy to make and really tasty! I cheated a little and used a store bought sesame sauce instead of making my own entirely from scratch. simple stir fry
I made this stir fry for Kevin and a friend and myself for lunch this past weekend, it was pretty good. I FINALLY got PERFECT tofu, I was so proud of myself for those golden lil cubes.
